Comes down firmly on the herbal side, opening with a blast of lemon and dill, but interventions, including barrel fermentation, soften and fatten it and add notes of butter and vanilla. In the mouth the lemony flavors return, with some residual sugar. The finish is a duet of acidity and sweetness. —S.H.
